Ingredients
- 1 package of Scottish salmon
- 150g fresh spinach
- 2 sheets of puff pastry
- 1 egg
- Olive oil
- A pinch of salt and pepper
Method
- Preheat your oven to 180°C (356°F).
- Wash the fresh spinach and allow it to drain.
- If using frozen spinach, thaw it in a sieve and squeeze out excess moisture.
- Gently heat the spinach in a non-stick pot until wilted, then drain any remaining liquid.
- Roll out the puff pastry and cut out 8 hearts of the same size.
- Lightly grease a baking tray with olive oil and place 4 hearts on it, ensuring they are spaced apart.
- Place a small mound of spinach and a slice of salmon on each heart.
- Cover with the remaining 4 hearts and press the edges firmly to seal.
- Beat the egg in a cup and brush the tops of the hearts with the egg yolk.
- Bake in the preheated oven for approximately 15 minutes until golden brown.
